EVERY COFFEE IS UNIQUE. Each cup begins as fruit on a small flowering tree. The producer's approach combines with the natural ecology through elements like soil, sun, and rainfall to determine the cup’s final flavour. We meticulously source and precisely roast to always showcase these particular and individual qualities. A coffee might taste juicy & fruity, bright & clean, or big & sweet. We work batch-to-batch, crop-to-crop, and harvest-to-year to let every cup quietly tell you a wonderful story.
OUR MISSION IS TO RE-IMAGINE THE POSSIBILITIES FOR A CUP OF COFFEE. With creativity, we push forward the methods and techniques for roasting. Relying upon our strong ethical mandate, we support our producers and farmers through tangible and real support. We passionately seek to forever do better on the many social and political links between our producer network and your cup. At Quietly, we want to help people experience the diversity and variety of flavours inherent to fresh and seasonal coffee, which demands equitable trade and transparency.
OUR HISTORY STARTS IN THE LIBRARY. We only roasted our first batches in February 2019, so we are relatively new. However, the Quietly story reaches much further back with our Director of Coffee, Lee Knuttila. While completing his Doctorate, an interest in coffee bloomed and led to many nights in the library stacks, learning coffee's history and the chemistry of roasting. When reading was not enough, Lee started working at Toronto’s Cut Coffee (which shifted to Sam James Coffee following Lee’s departure), where he worked for over half a decade. At Cut, he honed his craft as a roaster and established lasting relationships with a robust producer network. Quietly is the culmination of many things but will always be about Lee's passion, exploration, curiosity and love of a great cup.
CLIMATE CHANGE IS A DIRECT THREAT TO COFFEE. The issue is at the heart of everything we do because it is endangering the livelihood of every coffee farmer and producer. We are perpetually looking to lessen our environmental impact. Our retail bags are made from starch-based, compostable PLA. Customers can simply remove the tin tie and compost or dispose of them according to local municipal guidelines. Rather than relying on new boxes, we source other companies used boxes. They may be rough around the edges but they still protect our product and ensure that trees live on. For wholesale partners in Toronto, we offer reusable buckets rather than single-use bulk bags. We will deliver fresh and collect your empties. At Quietly, there is no dividing line between environmentalism and ethical sourcing.
